Nutty Notes

Store nuts in the shell and they will keep longer. This protects them from light, heat, moisture, and air, all of which cause them to go rancid. If you keep a good variety on hand, your family will get quality protein. Store nuts in a cool, dark place, and if they’re already shelled, put them in the freezer for extra protection. Throw away shriveled or dry nuts—they’re probably rancid. Sybil Hendricks, San Jose, California
