Applesauce Quickie
Broiled Bacon-Wrapped Burgers
2 tablespoons butter
1 1/2 pounds lean ground beef
4 slices bacon

Melt butter in skillet over medium-high heat.

Combine ground beef and melted butter in a bowl, and season as desired with salt and pepper.

Shape into patties about 1″ thick and 3″ in diameter.

Wrap a piece of bacon around the outer edge of each patty and secure ends with toothpick.

To cook medium rare, broil about 4 minutes each side.
Flavorful Tomato Aspic
1/2 cup bottled russian dressing
1 cup tomato juice
1 package unflavored gelatin
1 head boston or romaine lettuce

Heat together dressing and tomato juice.

Sprinkle gelatin on 2 tablespoons water in a bowl to soften, then add to hot mixture and stir well.

Pour into 1-quart greased mold. Chill in refrigerator for several hours until well set.

Serve plain on lettuce, or top with roquefort dressing or onion dip.
Applesauce Quickie
2 cups sweetened applesauce
12 graham crackers
1 cup whipped cream
1/2 cup chopped walnuts

Put 2 or 3 tablespoons applesauce between each graham cracker, allowing stack of three crackers per serving. Place on dessert plates. Top each with applesauce.

Place in refrigerator for several hours or overnight.

When ready to serve, top with whipped cream and sprinkling of nuts.
