Cucumber Tuna Boats
3 medium cucumbers
1 (6 1/2 ounces/184 g) can of water-packed tuna, drained and chilled
2 hard-boiled eggs, peeled and chopped
1 medium tomato, chopped
1/3 cup sour cream
2 tablespoons sweet pickle relish

Have an adult cut each cucumber in half lengthwise. Using a spoon, scoop out the seeds and throw them away.

Drain the cucumbers, cut-side down, on paper towels.

Combine remaining ingredients, and spoon into the cucumber boats and serve.
