Apricot-Coconut Candy
confectioners’ sugar
2 tablespoons softened margarine
1/2 cup light corn syrup
1 tablespoon water
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
2/3 cup nonfat dry milk
2 cups chopped dried apricots
2 cups flaked coconut

Pour about 1/2 cup of confectioners’ sugar into a shallow bowl. Place a piece of waxed paper next to the bowl; set aside.

Mix the margarine with the corn syrup in a large bowl. Stir in the water, vanilla extract, almond extract, and dry milk. Add the apricots and coconut to the mixture.

Using clean hands, mix the dough thoroughly. Pinch off a small piece and roll it into a 1-1/2″ (4 cm) ball. Roll the ball in the confectioners’ sugar, then put it on the waxed paper. Repeat until you have used all of the dough. Store in an airtight container.
