Kitchen Krafts

One way you and your family can lighten your mother’s load and show your appreciation for her is to cook a meal. You can prepare these recipes for breakfast, lunch, or dinner with your dad or another older person’s help. Any of these yummy recipes could also be made for family home evening refreshments.

Mexican Quiche

1 1/2 pounds (.68 kg) lean ground beef

1/2 cup water

1 package (1.25 ounces/35 g) taco seasoning

1 can (15 ounces/425 g) black beans, drained

4 eggs

3/4 cup milk

1 1/4 cups biscuit mix

1 cup sour cream

2 1/2 cups chopped lettuce

2/3 cup chopped tomato

1/4 cup chopped green pepper

1/2 cup sliced olives, drained

2 cups grated cheddar cheese

  1. Brown the ground beef in a skillet; drain off the grease. Stir in the water, taco seasoning, and black beans; simmer and stir for 5 minutes.

  2. Spread the meat mixture evenly in a greased 9″ x 13″ (23 cm x 33 cm) baking pan.

  3. In a medium bowl, beat the eggs and milk together. Blend in the biscuit mix, then slowly pour over the meat mixture.

  4. Bake at 400° F (205° C) for 20–25 minutes or until golden. Cool for 5 minutes.

  5. Spread the sour cream evenly on the quiche; cover with the lettuce. Sprinkle on top the tomato, green pepper, olives, and cheese. Cut into squares and serve.

Yogurt Dip and Mini Fruit-Kabobs

1 cup plain or vanilla yogurt

2 teaspoons orange juice

2 tablespoons honey

6 strawberries, washed

12 mandarin orange segments

1 medium banana, peeled

12 toothpicks

  1. In a small bowl, mix the yogurt, orange juice, and honey together. Cover the dip and chill it in the refrigerator.

  2. Slice the strawberries in half and remove the stems. Cut the banana into 12 slices. On each toothpick, place a strawberry half, a mandarin orange segment, and a banana slice. Serve the mini kabobs with the dip.

A+ Chocolate Bread or Cupcakes

2 packages (18 1/4 ounces/517 g each) chocolate cake mix

10 egg whites

1/2 cup oil

1/2 cup water

1 can (29 ounces/822 g) pumpkin

1 cup chocolate chips

  1. In a large bowl, beat all the ingredients together.

  2. To make chocolate bread, grease and flour 2 large loaf pans, then pour the batter equally into each pan. Bake at 350° F (175° C) for 45–50 minutes. For cupcakes, lightly grease muffin pans (optional: use paper liners), and fill each cup 2/3 full. Bake at 350° F (175° C) for 20–25 minutes.
