A great way to notice our blessings is to write them down. And today we are going to write them down on COOKIES!
By the end you’ll have a plate full of things to be thankful for.
Sugar Cookies
Ingredients:
- 2½ cups (318 grams) all-purpose flour
- 2 teaspoons baking powder
- 3/4 teaspoon fine sea salt
- 2 sticks (226 grams) butter at room temperature
- 1¼ cups (250 grams) granulated sugar, plus ¼ cup (50 grams) for rolling
- 1 large egg plus 1 egg yolk
- 1 teaspoon vanilla extract
Instructions:
- Preheat oven to 350° F (177° C).
- In medium bowl, whisk together flour, baking powder, and salt.
- In large bowl, mix butter and 1¼ cups sugar for about 2 minutes, until light and fluffy. Mix in the egg, yolk, and vanilla. Slowly beat in the flour mixture.
- Place the remaining 1/4 cup sugar in a shallow dish. Divide dough into balls, then roll in sugar to coat evenly. Place on the baking sheets, spacing them 2 inches apart. Flatten slightly with the bottom of a measuring cup.
- Bake for 10 to 12 minutes, or until cookies begin to brown but are still a little wet looking in the middle. Cool completely.
- When sugar cookies are cool, decorate them with something you’re grateful for using the icing recipe below!
Icing
Ingredients:
- 1 ½ cups confectioners’ sugar
- 3 tablespoons butter, softened
- 1 tablespoon vanilla extract
- 1 tablespoon milk, plus more as desired
- 3 drops food coloring of your choice (optional)
Instructions:
- Beat sugar, butter, vanilla, and 1 tablespoon milk in a large bowl until creamy.
- Mix in more milk, 1 to 2 drops at a time, to reach desired spreading consistency. Stir in food coloring.
- Transfer the icing into a small plastic baggie. Cut the tip of the bag a tiny bit and use it to pipe the frosting onto the cookie.
- Write a word or draw a picture to represent something you’re grateful for on each cookie!
